If you grade in Premiere or any other NLE, or you just want to apply LUTs to quickly get footage out, the LUT version is the way to go.

Will this work on the iPhone 15 Pro/Max?

Yes it will work. While the sensors in the 15 and 16 do differ, the differences are minor. No bigger than the differences between the sensors used in the ultra-wide, normal and telephoto cameras on 16 Pro/Max.
